Labor Day Recipe
I hope you’re enjoying rest, relaxation & fun this Labor Day weekend. And if you’re looking for a new recipe to throw on the grill for this transitional weekend from summer into fall, I have one just for you. When I was growing up, my mom would always make “surprise packages.” For years my siblings and I thought that she invented this recipe. Although, in truth she recently told us that she did not exactly invent it, she saw some version of it on a Weber grill ad and then she submitted it for a contest of her favorite recipe and won $50! Well, drum roll please, here it is, our famous family recipe.
Surprise Packages
-4 thin cut boneless pork loin chops
-1 sweet onion
-1 large tomato
-2 bell peppers (any color, I like red, but green, yellow or orange work too)
-bacon, 8 strips
-cheddar cheese, sliced
-toothpicks
Take 2 pieces of bacon and lay them criss-cross on a smooth clean surface. Place 1 boneless pork chop on the “X” in the center of your 2 strips of bacon. Place a slice of sweet onion on top of the pork. Place 1 slice of tomato on top of the onion. Place a 1/4-1/2 of a bell pepper on top of the onion. Then wrap the bacon tightly around the stack and secure with 1-2 toothpicks. Place on low-medium heat on the grill for 45 minutes or until pork is cooked through. At the very end of the grilling, lay 1 slice of cheddar cheese on top, allow it to melt. Then remove from the grill and enjoy! Serves 4.
